Growing up in the southern United States biscuits and gravy was a staple. Breakfast, lunch or dinner; soft warm biscuits with rich sausage gravy was the comfort food! This recipe was created with warm childhood memories in mind. The corn starch biscuits are soft and fluffy yet hearty enough to hold up under the rich sausage gravy.
Gluten Free Biscuits and Gravy
Preheat oven to 375 fahrenheit.
Mix all dry ingredients in a bowl. Cut in butter.
Add milk and vinegar. Mix well until a soft dough is formed.
Spread onto a greased cookie sheet (or silpat) to 3/4 inch thickness (dough is sticky, so you may want to use an oiled spatula).
Score (with an oiled butter knife) into 8 rectangles.
Bake 17-20 minutes, just until it looks light golden and crisp.
In a medium skillet, cook ground meat just until done. Add the butter, let it melt. Add in the GF Flour while stirring, until meat is coated evenly.
Slowly pour in the milk, a little at a time, keep it moving until gravy is smooth and the desired consistency.
Adjust salt and pepper to taste.
Serve hot sausage gravy over biscuits and ENJOY!!
For a lighter or lactose free meal coconut milk or lower fat cow's milk can be used in place of whole milk.
Please note that these alternatives will change the consistency of the gravy.
In my experience almond milk does not thicken and is not recommended as a cow milk alternative in this recipe.
